Indian-Style Lentils Recipe

Adapted from a dal soup recipe printed in Practical Cooking: Soups (http://amzn.to/okjj6r). Makes about 6 cups of food, and freezes/reheats very well. Stove heats can differ, so please note that, after all ingredients are combined, treat this like you would plain lentils: cover and cook on a heat which simmers but doesn't burn food on the bottom of the pot.

Recipe Ingredients for Indian-style lentils

2 tbsp ghee
4 cloves garlic, minced
2 onion, chopped
1 tsp turmeric
1 tbsp garam masala
2 tsp cumin, ground
28 oz crushed tomatoes, canned
2 cup lentils
1 tbsp lemon juice
20 oz vegetable stock
27.32 oz coconut milk
1 black pepper
1 salt

Recipe Directions for Indian-style lentils

  1. If you're make your own garam masala, prep that first by putting your spices in your mortar (or spice mill) and finely grind them.

  2. In a soup pot, melt ghee over medium heat.

  3. Add onions, saute until almost translucent.

  4. Add all spices and garlic; saute another 30-40 seconds (don't burn the garlic).

  5. Stir in tomatoes, lentils, lemon juice, vegetable stock and coconut milk. Bring to a boil while stirring frequently.

  6. Reduce heat to medium-low, cover and cook for 30 minutes or until lentils are tender.

  7. Serve with freshly-made brown rice.
