Recipe Ingredients for Indian-Style Lentils

1 medium onion, diced
1 tablespoon vegetable broth
2 cloves garlic, minced
1 teaspoon ginger
1/2 teaspoon turmeric
1/2 teaspoon salt
1 cup tomatoes, canned diced
2 cups lentils, canned
1 cup frozen spinach

Recipe Directions for Indian-Style Lentils

  1. Dice onions and garlic and let sit for a least 5 minutes to bring out their health-promoting properties.

  2. Healthy saute onions in 1 tablespoon broth for 3 minutes.

  3. Add garlic, ginger, turmeric, salt, tomatoes and lentils.

  4. Simmer covered for 5 - 7 minutes.

  5. Add frozen spinach and continue simmering for 2 more minutes.

  6. Serve over brown rice.
