Recipe Ingredients for Indian-style Curry

1 cup uncooked brown rice
1 lb Golden Potatoes
1 cup diced canned tomatoes
3/4 cup water
1 teaspoon salt
1 Onion Yellow
1 tablespoon butter
2 tablespoons extra virgin olive oil
1/2 lb Tofu, Extra Firm
1 teaspoon curry powder
1 teaspoon cumin seeds
1/4 teaspoon turmeric
1 dash crushed red pepper
2 tablespoons g) Heavy Cream

Recipe Directions for Indian-style Curry

  1. Cook the brown rice according to the packaging. I use a 2:1 ration of water to rice in a rice cooker with a little salt.

  2. Clean the potatoes and chop them up into bite-size pieces and put them in a microwave-safe dish with about a half-inch of water in the bottom. Cover with plastic wrap and microwave for 6 minutes.

  3. In the meantime, in a large skillet, melt the butter in the olive oil, add the onion and cook over medium heat until they are soft, about 5 minutes. Stir in the cumin seeds, curry powder, turmeric, and crushed red pepper, wait about thirty seconds, then stir in the tomatoes, water, and the teaspoon of salt. Remove from heat, stir in the cream and blend with a hand blender. Note: you might need to transfer it to a bowl to puree, then return it to the skillet.

  4. Once the curry is back in the pan, add the tofu and potatoes and bring barely to a simmer.

  5. Serve on bed of rice (I prefer brown rice).
