2 chicken breast
1 eggplant
1 zucchini
1 onion
1 tbsp garlic
1 tbsp ginger
1/4 cup cilantro
4 tbsp vegetable oil
1 tbsp curry powder
1 large tomato
1 jalapeno pepper

  1. cube or slice chicken

  2. heat oil

  3. add curry powder

  4. sweat onions, jalapeno, garlic and ginger

  5. add/cook chicken
