Indian Split Pea Soup Recipe

This can be served hot or cold. If served cold, serve with diced cucumbers and yogurt (soy if you're vegan). There is no animal protein in this recipe, so it is also vegan.

Recipe Ingredients for Indian Split Pea Soup

1 1/2 cups red lentils
6 cups water
1/2 teaspoon turmeric
2 tablespoons lemon juice
1 green chili pepper, seeded and finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons salt

Recipe Directions for Indian Split Pea Soup

  1. Pick over the lentils to remove any grit and then wash under running cold water and drain them in a colander.

  2. Place the drained lentils in a large saucepan with the water and bring to a boil. Reduce the heat and cover the pan. Simmer very gently for 1 1/4 to 1 1/2 hours until cooked and tender. Remove from heat.

  3. Pour the lentils and their liquid into a large blender or food processor. Add the lemon juice, seasoning, chile, cumin and coriander and blend till smooth. If the soup is a little too thick, thin it down with water or more lemon juice. Transfer to a serving bowl and refrigerate until required.

  4. Dice the cucumber just before serving. Swirl the yogurt into the chilled soup and serve garnished with cucumber.
