Recipe Ingredients for Indian-Spiced Squash

1/4 cup raw Pumpkin seeds (pepitas), shelled
1 tbsp ginger, fresh grated
1 tbsp olive oil
2 lbs winter squash, peeled, seeded, and cut into 1/2 inch pieces (about 4 cups)
1/2 cup dried cranberries and/ or golden raisins
1 tsp ground cinnamon
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp curry powder
14 oz low sodium vegetable broth
3 cups brown rice, cooked (hot)

Recipe Directions for Indian-Spiced Squash

  1. In a large skillet toast pumpkin seeds over medium heat for 4-5 minutes or until puffed and lightly browned, stirring occasionally. (Watch carefully because pumpkin seeds may pop in skillet.)

  2. In the same skillet cook and stir ginger in hot oil over medium heat for 1 minute. Increase heat to medium-high; add squash and cook for 3-5 minutes or until squash starts to brown. Add cranberries or raisins, cinnamon, coriander, cumin, and curry powder; cook for 1 minute more.

  3. Carefully add broth to squash mixture. Bring to a boil; reduce heat. Simmer, covered, for 10 to 15 minutes or until squash is tender but not mushey. To serve spoon squash mixture over rice and sprinkle with pumpkin seeds. If desired, serve with condiments.

  4. Desired condiments(such as sliced bananas, pineapple chunks, sliced green oinons, and/or chutney) (optional)
