Indian Spiced Rice and Peas Recipe

Good vegetarian main dish or omnivore side dish. Mildly spiced.

Recipe Ingredients for Indian spiced rice and peas

2 T Vegetable Oil
1 medium onion, chopped
1 green bell pepper, chopped
1/2 cups chickpeas, raw, cooked and drained to yield 1 1/2 cups
1 garlic clove, minced
1 T fresh ginger, minced
1/2 t turmeric
1/2 t cinnamon
1/2 t paprika
1/4 t cardamom
2 c water
2 carrots, finely chopped
15 oz chopped tomatoes
1 c frozen green peas
1 1/2 c basmati rice

Recipe Directions for Indian spiced rice and peas

  1. Heat the oil in nonreactive skillet with tight fitting lid. Add the onion and saute over medium heat, stirring often for seven minutes.

  2. Stir in the chickpeas and the pepper. Cover and let the vegetables sweat for 3 to 4 minutes, stirring occasionally.

  3. Stir in the ginger and garlic and saute 1 minute more.

  4. Combine the spices in a small bowl, then stir them into the vegetables. Cook the mixture, stirring, over moderate heat for one minute, then stir in the remaining ingredients.

  5. Increase the heat to bring the mixture to a boil, then cover.

  6. Reduce heat to low, and simmer for 20 minutes.

  7. Turn off the heat and leave the cover on for another 10 minutes without peeking.
