Recipe Ingredients for Indian-Spiced Eggplant & Chickpea Stew

1 tbsp Curry Powder
2 g Garam Masala Powder
0.5 tsp Mustard Seed, Yellow
1 tbsp Vegetable Oil, Canola
70 grams Onions
2 clove Garlic
1 tsp Ginger Root
1/4 tsp Sea Salt
9 oz Eggplant
3 cup Cauliflower
15 oz Vegetable Tomatoes Sliced Stewed
12 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
0.5 cup (8 fl oz) Water
0.5 tsp Turmeric, Ground
2 g Cumin Powder

Recipe Directions for Indian-Spiced Eggplant & Chickpea Stew

  1. Heat a Dutch oven over medium heat, add curry powder, garam masala and mustard seeds and toast, stirring, until spices begin to darken, about 1 minute.

  2. Add oil, garlic, ginger an d salt to the pot and cook, stirring until softened, 3 to 4 minutes. Stir in eggplant, cauliflower, tomatoes, chickpeas, water and the reserved as well as remaining seasoning. Bring to a simmer.

  3. Cover,m reduce heat and cook, stirring occasionally, until the vegetables are tender, 15 to 10 minutes. Top each serving with a dollop with yogurt, if desired.
