Recipe Ingredients for Indian-spiced chicken pitas

25 lbs chicken breasts
12 1/2 tbs garam masala
3 tbs sea salt
25 cups cucumber, seeded and thinly sliced
18 cup nonfat plain yogurt
1 1/2 cups mint
1 cups lemon juice
100 whole wheat pitas
25 cups romaine lettuce
25 tomatoes, sliced
6 cup red onion, thin sliced
4 cups extra virgin olive oil
4 cups orange juice
2 cups cider vinegar
22 tbs shallots, finely chopped
2 tbs sea salt
2 tbs pepper
66 cups whole wheat couscous, cooked
33 cups nectarine, chopped
16 cups blueberries
16 cups raspberries
4 cups almonds, toasted and sliced
100 ears of corn
1 tbs sea salt
1 tbs pepper
1 cup butter

Recipe Directions for Indian-spiced chicken pitas

  1. Pitas: Season chicken with 2/3 of the garam masala and salt. grill until minimum internal temp is reached.

  2. combine cucumber, yogurt, mint, lemon juice, remaining garam masala and salt. thinly slice chicken.

  3. warm pitas and split open. fill with chicken, yogurt sauce, lettuce, tomato and onion.

  4. Couscous: Whisk oil, orange juice, vinegar, shallots, salt and pepper in bowl. add cooked couscous, nectarines, berries and almonds. toss to combine

  5. Corn: Spray corn with vegetable spray. grill until tender. roll in butter and season with salt and pepper
