Recipe Ingredients for Indian Skillet Black-Eyed Peas

2 T oil
1 c onions, chopped
1 clove garlic, minced
1 T ginger, minced
1/8 t cayenne
1/4 t ground cinnamon
1/4 t ground cardamom
1/2 t ground coriander
1 t salt
1 cup water
1 t lemon juice
3 cups black-eyed peas, cooked (2 cans, rinsed and drained)
1/2 c chopped tomatoes
2 cups chopped fresh spinach

Recipe Directions for Indian Skillet Black-Eyed Peas

  1. heat oil

  2. saute onion and garlic on medium high heat till soft and beginning to brown, about ten minutes

  3. Add spices and salt, stirring well

  4. stir in water, lemon juice and black-eyed peas

  5. cover and simmer for about ten minutes

  6. add tomatoes and spincah and cook just till spi nach wilts.

  7. serve right away
