Recipe Ingredients for Indian shrimp on spinach

2 t cider vinegar
1/2 t cayenne pepper
1 t cumin
1/2 t salt
1/4 t turmeric
1 lb large shrimp, peeled and deveined
3 T vegetable oil
2 medium onions, thinly sliced
10 T orange juice
10 oz spinach leaves, rinsed

Recipe Directions for Indian shrimp on spinach

Mix vinegar, cayenne, cumin, salt and turmeric into a paste. Put in plastic bag with shrimp, seal and toss to coat. Refrigerate for 1 hour. Heat oil in large sillet. Add onions and cook until light brown, stirring occasionally, about 10 minutes. Increase heat to high and add shrimp with seasonings and 6 T orange juice. Cok until shrimp are just opaque, about 4 minutes. Meanwhile cook spinach over high heat until wilted, about 2 minutes. Drain and toss with remaining orage jouice. Place greens on plates and top with shrimp. Serves 4.
