Recipe Ingredients for Indian Roasted Vegetables

1 head, medium (5-6" dia) Cauliflower
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 medium (2-1/2" dia) Onions
1 cup, chopped Carrots
4 tbsp Cumin Seed
4 tbsp Turmeric, Ground
4 tbsp Curry Powder
0.3 cup Olive Oil

Recipe Directions for Indian Roasted Vegetables

Cut veggies into similar sizes, about an inch or less cubed. Toss together in a roasting pan with oil. Sprinkle with spices and toss to coat. Roast in oven at 325 until veggies are soft, tossing every 10-15 minutes.
