Recipe Ingredients for Indian Rice

125 g rice (basmati)
1 teaspoon olive oil
1 teaspoon ground coriander
1/2 teaspoon cumin seeds
1 teaspoon cardamom pods
1 stock cube (vegetable)

Recipe Directions for Indian Rice

  1. Put the rice in a sieve and run lots of cold water through it or leave it to soak.

  2. Heat the olive oil in a frying pan and quickly stir fry the spices in it. Only a brief frying is needed to release the flavours so don't overdo it or you will get a burnt flavour.

  3. Add the rice and stock and bring to the boil.

  4. Srit, cover with a tight fitting lid and simmer gently for 10 minutes to let the rice cook and absorb the stock.

  5. Take the pan off the heat and let it stand for 10 minutes, stir through before serving.
