A cooked and baked cornmeal pudding made with polenta and dried blueberries

Recipe Ingredients for Indian Pudding with Blueberries

1/2 cup polenta
5 cups milk, 2%
1/3 cup molasses
1/3 cup brown sugar
2/3 cup dried blueberries
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
2 tbsp butter

Recipe Directions for Indian Pudding with Blueberries

  1. Preheat the oven to 350 degrees.

  2. Butter a 2 quart baking dish and set aside.

  3. Combine the polenta and milk in a saucepan and slowly bring to a boil, stirring frequently with a whisk. Reduce the heat and simmer for 15 minutes, until slightly thickened.

  4. Remove from the heat and mix in the molasses, brown sugar, dried blueberries, spices and butter. Pour into the baking dish. Bake until a dark brown crust has formed on top and the mixture is thick, about 1 hour.
