Recipe Ingredients for Indian Potatoes, Cauliflower and Peas (Aloo Gohbi)

2 T canola oil
3 cloves garlic, pressed
2 T fresh ginger root, grated
1 tsp turmeric, ground
1 tsp coriander, ground
1 tsp cumin, ground
1/2 tsp chili powder
1/2 tsp paprika
1 tsp salt
448 g russet potatoes, peeled, cut into 1/2-inch pieces
460 g cauliflower, cut inot bite-sized pieces
1 1/2 cups water
1/2 c frozen peas, thawed

Recipe Directions for Indian Potatoes, Cauliflower and Peas (Aloo Gohbi)

  1. Heat oil in a large pot or skillet over medium heat. Add garlic and ginger, saute for 1-2 minutes.

  2. Add the turmeric, coriander, cumin, chili powder, paprika, saute another minute or so.

  3. Add the potatoes,cauliflower and salt, mix well.

  4. Add the water; cover and simmer until vegetables are tender; about 5-7 minutes.

  5. Add peas and simmer another 2 minutes.

  6. Season with salt and pepper to taste. Serve.
