From the Moosewood low fat cookbook, but I use a whole egg rather than just eggwhite. The calorie count is per pancake.

Recipe Ingredients for Indian Potato Pancakes

1 1/2 cups white potatoes, grated, well packed
1 1/2 tsp garam masala or curry powder
1/2 tsp salt
1/4 cup green onions, finely chopped
1 egg, lightly beaten

Recipe Directions for Indian Potato Pancakes

  1. Combine potatoes, garam masala or curry, salt, green onions, egg.

  2. Warm a large nonstick skillet

  3. Drop the batter by 1/4 cup measure onto skillet and gently flatten into a circle with the spatula. Make as many pancakes as fit, but leave room for flipping. You should get 7 three inch pancakes in total.

  4. Cook on medium heat for 5 minutes, until browned. Flip, cover and cook for 3 minutes longer. Then uncover and cook until browned, another 3 minutes.
