Chicken Breast in Indian Curry Sauce

Recipe Ingredients for Indian Malay Chicken Curry

16 oz Chicken, broilers or fryers, breast, meat only, raw
2 medium (2-1/2" dia) Onions
4 cloves, raw Garlic
2 tsp Ginger Root
2 tbsp Heinz Tomato Ketchup
1 tsp Mustard
2 tsp Cumin
1 tsp Cinnamon, Ground
2 cup Soup, stock, chicken, home-prepared
3 tbsp Curry Powder
1/4 cup Raisins
8 oz Thai Lite Coconut Milk
1 oz Peanut Oil

Recipe Directions for Indian Malay Chicken Curry

  1. Cut the chicken into 1 inch cubes and lightly brown in oil. Remove from pan and set aside.

  2. Saute chopped onion until tender. Add garlic and ginger, making sure there is enough oil remaining so that nothing sticks. Add cumin and mustard. Add the curry powder and stir constantly to prevent any sticking. Stir the "paste" until the curry powder becomes fragrant; this usually takes 1 to 2 minutes (be careful not to burn the curry powder).

  3. Add the ketchup and stir until they form a sauce (3-4 minutes). Add the chicken broth, cinnamon. Simmer uncovered 10 minutes.

  4. Add cooked chicken. Cover and simmer until chicken is cooked and tender (approximately 20 minutes).

  5. Serve with white rice if desired.

  6. If you want a smoother, Malay style curry, add the coconut milk with the chicken broth.
