An easy vegetarian rice dish popular in South India

Recipe Ingredients for Indian Lemon Rice

1 cup white rice
2 cups water
1 tsp mustard seeds, ground
1 tsp turmeric
1/2 tsp ginger
1/4 tsp cumin
1 tbsp olive oil
1/3 cup lemon juice
2 tbsp fresh cilantro

Recipe Directions for Indian Lemon Rice

  1. Cook rice in water until done, about 20 to 25 minutes.

  2. In a separate skillet, fry the mustard seeds, turmeric, ginger and cumin in olive oil for just a minute or two, then add to rice.

  3. Add lemon juice and cilantro to rice and stir well to combine.
