Recipe Ingredients for Indian Green Beans with Mushrooms (sem aur khumbi)

1 lb green beans
2 small onions, peeled and cut in fine half rings
8 oz shitake mushrooms, sliced thick
1 medium tomato, coarsely chopped
5 tbs olive oil
5 cloves garlic, peeled and chopped
3/4 tsp cumin seeds
1/4 cup ginger root, peeled and cut into 1" dia slices
3/4 tsp garam masala
1/2 tsp turmeric
3/4 tsp cayenne pepper
1 1/2 tsp cumin
2 tsp coriander
1 tsp salt

Recipe Directions for Indian Green Beans with Mushrooms (sem aur khumbi)

Put oil in pan over med-high heat. When oil is hot put in cumin seeds. as soon as the seeds begin to sizzle, put in the onion. Stir and fry until the onion browns. Put in the ginger and garlic. stir until the garlic starts to brown. Put in the mushrooms. Stir and fry for 2 min. Put in the beans, ground coriander, ground cumin, turmeric, garam masala, cayenne, salt, tomato, and 1/2 cup water. Bring to a boil. Cover, lower the heat and simmer for 15 min. Remove the cover, raise the heat, and boil most of the liquid away, stirring gently as you do so.
