Vegetarien Eggplant and Spinach curry, great over brown rice.

Recipe Ingredients for Indian Eggplant and Spinach Curry

1 eggplant
1 onion
2 cups spinach
2 tomatoes
1 tbsp mustard seed
4 tbsp oil
1 tbsp garlic
1 tbsp ginger
1 cup water
1 tbsp sugar
1 tbsp curry powder

Recipe Directions for Indian Eggplant and Spinach Curry

  1. cook diced eggplant in oil 2 tbsp, then add toasted mustard seed

  2. separately cook diced onion until golden in 1 tbsp oil, add garlic and ginger cook one min. add curry powder cook 30 sec.

  3. add water diced tomatoes, 1 tbsp sugar, and spinach cook until spinach is well wilted.

  4. mix in eggplant and serve
