Recipe Ingredients for Indian Eggplant and Pea Stew

1 tablespoon Coconut Oil
1 1/2 medium Eggplant, roasted
1 cup Green Peas
1 cup Chick Peas
1 medium Onion
3 cloves Garlic
28 oz chopped Tomatoes
1/4 cup Cilantro
1 tablespoon chopped ginger
1/2 teaspoon Cumin Seed
1 dash Cayenne Pepper
1 dash Cinnamon

Recipe Directions for Indian Eggplant and Pea Stew

  1. Roast the eggplant over an open flame (even on your gas stove is fine) until it collapses. Set on a plate to cool. When cool, scoop out the eggplant into a bowel and chop it up thoroughly.

  2. Chop the onion thoroughly. Saute in coconut oil until soft, and a bit brown.

  3. Add chopped ginger and garlic.

  4. Add spices to open places in the pan. When the spices are warm and their flavors unlocked, stir the spices, onion and garlic together.

  5. Add tomatoes, let simmer and the flavors meld. This is a great time to scoop out the eggplant.

  6. Add eggplant, peas, and chickpeas. Simmer until flavors meld.

  7. Add cilantro.

  8. Serve with a side of nan, or whole grain bread.
