This is an adaptation of yellow chicken curry from India. The aromas and flavors are a delight to the senses! It is best served with fresh Naan bread and Jasmine or Basmati rice.

Recipe Ingredients for Indian Chicken Curry

3 tablespoons olive oil
1 onion, large, chopped
4 cloves garlic, minced
6 tablespoons curry powder
2 teaspoon ground cinnamon
2 teaspoon paprika
2 leaf, bay
1 teaspoon ginger
1 teaspoon sugar
1 teaspoon salt
1.64 lb chicken breasts, boneless
2 tablespoon tomato paste
2 cup yogurt, plain
1 1/2 cup coconut milk
1/4 cup lemon juice
1/2 teaspoon cayenne pepper

Recipe Directions for Indian Chicken Curry

  1. Heat olive oil in a skillet over medium heat.

  2. Saute onion until lightly browned. Stir in garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar and salt.

  3. Continue stirring for 2 minutes.

  4. Add chicken pieces, tomato paste, yogurt, and coconut milk.

  5. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.

  6. Remove bay leaf, and stir in lemon juice and cayenne pepper.

  7. Simmer 5 more minutes.
