A flavorful combo of veggies with Indian spices.

Recipe Ingredients for Indian Cauliflower and peas

1 head cauliflower
1 jalapeno pepper
1 sweet potato
3 potatoes
1 onion
2 cloves garlic
1 t. ginger
2 cups frozen peas
1/2 t. mustard seeds
1/2 t. curry powder
1/2 t garam masala
4 T vegetable oil
1/2 c cilantro, chopped

Recipe Directions for Indian Cauliflower and peas

  1. Toss cauliflower and potatoes (cut in pieces) in about 2 T oil. Roast caluliflower and sweet potato about 30 minutes in 450 degree oven.

  2. Meanwhile saute onion, ginger, garlic, and jalapeno in remaining oil. Add spices and peas and about 1/2 cup water. Cook until peas are almost done.

  3. Remove veggies from oven and add to onion mixture. Cook until done (if not alreadu).

  4. Sprinkle with cilantro.
