I have no idea where I got this recipe. It makes a fabulous soup for cold winter day lunches.

Recipe Ingredients for Indian Butternut Squash soup

1 tsp cumin
1 tsp ground allspice
1 tsp turmeric
1/2 tsp black pepper
1/2 tsp ground cardamom
1/2 tsp ground cinnamon
1/4 tsp ground cloves
160 gram leeks
115 gram celery stalks
175 gram carrots
490 gram cooked butternut squash
16 oz red lentils
4 vegetable bouillon cubes
10 cups water
200 gram Chicken, Breast, Meat Only [5064
1 tbs Extra virgin olive oil]

Recipe Directions for Indian Butternut Squash soup

  1. Chop leeks finely and thoroughly rinse in water. Drain and set aside.

  2. Cut carrots and celery into bite-size pieces. Peel squash and cut into bite-size pieces. Cook the squash in water until just bite tender. Drain and reserve.

  3. Heat the EVOO in the bottom of a deep Dutch oven over medium-high heat. Add the vegetables and cook until soft and tender, approximately 10 minutes.

  4. Combine all seasonings and add to the vegetables. Stir to blend and cook for a minute or two, then add the vegetable bouillon cubes, the cooked squash and the water. Rinse the lentils under cold water, drain and add to the pot. Stir gently, then cover and reduce the heat to a simmer. Cook for approximately 1 hour, stirring occasionally, until lentils are tender. Add the chopped chicken breast meat, heat for a few minutes.

  5. Serve with Pomegranate Molasses raita for a colorful presentation.
