Recipe Ingredients for Indian Broccoli, Cauliflower and Spinach

2 small Onions, diced
1/4 cup Garlic, minced
2 medium Carrots, shredded
1/2 cup Broccoli Florets
1/2 cup Cauliflower Florets
1/2 cup Spinach
1/4 tbsp Margarine
1 PAM Spray
1/2 cup Tomato Sauce
1/4 cup Salsa
2 cups Water
1 tbsp Curry Powder
1 tbsp Cinnamon
1/2 tsp Sugar
8 ounces low-fat Yogurt

Recipe Directions for Indian Broccoli, Cauliflower and Spinach

  1. Heat oil/butter in a medium skillet over medium heat.

  2. Add onion and saute until translucent. Season with salt and pepper, to taste.

  3. Add garlic and cook for another minute. Add spices and cook until fragrant.

  4. Add tomato sauce, salsa, and florets. Simmer until floretes until tender.

  5. Add yogurt, and spinach. Bring to a simmer over medium heat and cook until heated through.
