Recipe Ingredients for Ina's Spinach Gratin

4 tablespoons unsalted butter
4 cups chopped yellow onions
1/4 cup flour
1 cup heavy cream
2 cups milk
3 pounds frozen chopped spinach
1 cup grated parmesan cheese
1 tablespoon kosher salt
1/2 cup grated gruyere cheese

Recipe Directions for Ina's Spinach Gratin

  1. melt butter, add onion and saute. Add the flour and cook, stirring for 2 minutes. Add tehcream and milk and cook until thickened.

  2. Aqueeze liquid from the spinach and add the spinach to the sauce. Add 1/2 cup parmesan cheese and mix well.

  3. Transfer the spinach to a backing dish and sprinkle the remaining 1/2 cup parmesan and th gruyere on top. Pake for 20 min or until hot and bubbly.
