From the Food Network's Barefoot Contessa, Ina Garten. Changed unsalted butter to olive oil, also the kosher salt to table salt, decreased the amount of salt and increased the amount of black pepper.

Recipe Ingredients for Ina Garten's Sauteed Carrots (modified)

6 cups carrots, sliced diagonally into 1/4 inch rounds
1/2 teaspoon table salt
1/2 teaspoon ground black pepper
2 tablespoons olive oil
1 1/2 tablespoons flat leaf parsley, chopped finely

Recipe Directions for Ina Garten's Sauteed Carrots (modified)

  1. Add the carrots, salt, pepper and 1/3 cups of water in a saute pan and bring to boil.

  2. Cover the pan and cook on medium-high heat for 7 to 8 minutes or until carrots are just cooked through.

  3. Add the oil and saute for about a minute, until the water evaporates and the carrots are coated in the oil.

  4. Remove from heat and toss with the parsley.

  5. Sprinkle with more salt and pepper if desired.
