Recipe Ingredients for Ina Garten's Roasted Eggplant Spread

1 lb eggplant
2 cups red pepper
1 cup red onion
2 tbsp garlic
3 tbsp olive oil
1/2 tsp cayenne
1 1/2 tsp salt
1/2 tsp black pepper
2 tbsp lemon juice
2 tbsp tahini
3 tbsp parsley

Recipe Directions for Ina Garten's Roasted Eggplant Spread

  1. Peel the eggplant and cut it into 1 inch cubes.

  2. Place the eggplant in a colander and sprinkle with salt. Let is sit for about 20 minutes

  3. Rinse the eggplant and put it in a large baking dish

  4. Chop the pepper, onion and garlic. Place them in the dish with the eggplant

  5. Toss with olive, salt and pepper

  6. Roast until soft and golden

  7. Puree in a blender

  8. Add the cayenne, lemon juice, tahini and parsley
