Middle Eastern version of Ratatouille, great side dish for meat eaters and an accompaniment to Jacket Potato, Cous Cous, Rice or Pasta for Vegetarians.

Recipe Ingredients for Imran Bayaldi

3 tablespoons Olive Oil
175 grams onion
6 grams garlic
1/4 teaspoon cinnamon
1/2 teaspoon sugar
385 grams canned tomatoes
300 grams aubergine
1 tablespoon parsley
50 grams pine nuts

Recipe Directions for Imran Bayaldi

  1. Heat oil and sweat the finely chopped onion on a low heat for 15 minutes, don't let them burn.

  2. Add Cinnamon, Caster Sugar, Crushed garlic, Salt and Pepper to taste. Cook for a further 2 to 3 minutes.

  3. Add chopped Canned Tomatoes and chopped Aubergine, mix well so that the onion and spices are evenly distributed. Add dried Parsley and stir.

  4. Cover and cook for 20 minutes stirring a couple of times while cooking on a low heat. Be careful not to burn.

  5. Toast the Pine Nuts and scatter over the Bayaldi just before serving.
