Recipe Ingredients for Impulse Minestrone Soup

1 tsp olive oil
1 clove garlic, finely chopped
1 cup zucchini, chopped
1/2 tsp dried basil
1/8 tsp oregano
1 cup frozen mixed vegetables
1 cup kidney beans, drained
14 1/2 oz tomatoes, diced
1 cup water
2 cups rotini

Recipe Directions for Impulse Minestrone Soup

  1. Heat the oil in a medium saucepan on medium heat. Saute the garlic, zucchini, basil and oregano, and cook, stirring, for 2 or 3 minutes. Add the mixed vegetables, beans tomatoes, and water. Simmer for 10 minutes.

  2. While the soup warms, cook the pasta in a small saucepan of boiling water for 7 to 9 minutes. Drain. Add the pasta to the soup.

  3. Remove the soup form the heat and serve. Season with salt and pepper to taste. Sprinkle with grated Parmesan if desired. (Parmesan not included in nutrition analysis.)
