Don't bother with this one. Yes I made it one day when I was tired of throwing out extra white rice. I always feel bad wasting food. But these things are...well pretty good really IF you eat them IMMEDIATELY after frying....but the next day, they are....very weird flabby things. Ground up leftover sticky rice in my small food processor, with a bit of water, until it was a paste. Mixed with enough flour and one egg, to make into a thick batter. Added a bit of salt. Fried in vegetable oil for a sort of chapati. Fairly labor intensive, took about ten minutes to get the rice ground enough to use. I hate throwing out sticky rice, and the kids will only eat so much of the fried rice I make with it. Next time maybe add some baking powder, they might puff up like chapatis. Pretty good with a little jam.

1/4 cup flour
1 egg
2/3 cup white rice
3 tbsp vegetable oil

Recipe Directions for improvised rice/flour pancakes

  1. Grind leftover white rice with water, into a paste. Add enough flour to make a soft dough. Add milk if necessary. Also mix in one egg. Heat the oil in a skillet, drop by big spoonfuls and form into kind of a pancake or patty. Fry until golden brown. Eat with jam/nutella/sprinkle with icing sugar.
