This is a bit more flavorful, and cut back on the olive oil.

Recipe Ingredients for improved lentil soup

1 tablespoon olive oil
2/3 cup onion
2/3 cup celery
2/3 cup carrot
3 cloves garlic
1 cup shredded green cabbage
4 cups chicken broth
6 ounces tomato paste
17 3/5 ounces cooked lentils
1 tablespoon italian seasoning

Recipe Directions for improved lentil soup

  1. Saute mirepoix in oil until soft. Add garlic.

  2. Add seasoning, broth, and tomato paste.

  3. Stir in cabbage & lentils.

  4. Blend with immersion blender about 1/3 to 1/2 of the soup to thicken.

  5. Heat soup until it's the temp you like.

  6. Serve with plain greek yogurt, or goat cheese on small toasts.
