Recipe Ingredients for improved cottage cheese cookies

2 tablespoon butter
7 tbsp. banana
1 1/2 cups raw sugar
2 eggs, lightly beaten
2 1/2 tablespoon fresh lemon juice
1 cups nonfat cottage cheese
2 cup all purpose flour
1 teaspoon baking powder
1 teaspoon salt

Recipe Directions for improved cottage cheese cookies

  1. Using an electric mixer, cream the butter and banana with the sugar until fluffy. Beat in the eggs, lemon juicel. Press the cottage cheese through a sieve and add it to the batter, beating well. Sift the dry ingredients together, add them to the batter and mix thoroughly.

  2. Drop the batter by the teaspoonful onto buttered baking sheets - spacing the mounds well apart.

  3. Bake in a preheated 400 F. (200 C.) oven for about 15 minutes, or until the cookies are lightly browned.
