like the other banana breakfast muffins but with less sugar substituted with sultanas and even more banana. Great for getting rid of browning bananas :)

Recipe Ingredients for improved banana breakfast muffin

3 eggs
70 g butter
100 g sugar
150 g brown flour
1 tsp bicarbonate of soda
2 tsp baking powder
1/2 tsp salt
350 g banana pulp
100 g sultanas
1 tsp mixed spice
60 g walnuts
1 1/2 cups bran

Recipe Directions for improved banana breakfast muffin

  1. Combine all dry ingredients together in mixing bowl

  2. Add eggs, butter and banana pulp and mix thoroughly

  3. Spoon into muffin cases and bake at 180 deg/C for 30mins

  4. Serve with coffee for breakfast
