from Betty Crocker; this is diabetic style; add 3/4 cup splenda

Recipe Ingredients for Impossibly Easy Pumpkin Cheesecake

15 oz pumpkin
8 oz cream cheese (fat free)
1/2 teaspoon vanilla
3 eggs
1/2 cup bisquick (heart smart)

Recipe Directions for Impossibly Easy Pumpkin Cheesecake

  1. Preheat oven to 350

  2. Put all ingredients in blender and blend for about 2 minutes or until smooth.

  3. Pour into PAM'D out pie plate. I used a 10". I think a 9" might have been better.

  4. Bake for about 40 minutes.

  5. Cool for 1 hour.

  6. Chill for 3 hours.
