A Bisquick Impossible pie using vegetables and no meat.

Recipe Ingredients for Impossible Vegetable Pie

1 1/2 cup chopped broccoli
1 1/2 cup raw spinach
1 cup mixed vegetables
1/4 cup edamame
1 cup Giant Eagle Four Cheese Mexican Blend
1/2 cup Original Bisquick mix
1 cup 1% milk
2 eggs

Recipe Directions for Impossible Vegetable Pie

  1. Preheat oven to 400 degrees

  2. Spray 9-inch pie plate with non-stick cooking spray

  3. Place all vegetables in pie plate and sprinkle with cheese

  4. In a small bowl whisk Bisquick, eggs and milk

  5. Pour Bisquick mixture over vegetables and cheese

  6. Season with pepper and herbs/spices of your choice

  7. Bake for about 25 minutes or until knife inserted in center comes out clean.

  8. Serves 6.
