Impossible Taco Pie Recipe

Originally a Bisquick recipe, I've converted some of the ingredients to a make it a bit healthier. I actually use 95% ground beef instead of 90% but couldn't make the recipe analyzer recognize it.

Recipe Ingredients for Impossible Taco Pie

1 lb 90% Lean Ground Beef
1/2 cup onion, chopped
36 g (1 package) Taco Seasoning Mix reduced sodium
4 oz (1 can) green chilies, chopped and drained
1 1/4 cup (1 1/4 cup) Fat Free Milk
3/4 cup Bisquick Heart Smart Baking Mix
1 egg
1/3 cup egg white substitute
2 Roma tomatoes, sliced
1 cup reduced fat Mexican cheese blend or 2% sharp cheddar

Recipe Directions for Impossible Taco Pie

  1. Heat oven to 400 degrees. Spray 10" pie plate with cooking spray.

  2. Cook & stir beef and onion over medium heat until brown; drain. Stir in seasoning mix. Spoon evenly into pie plate. Evenly layer chilies over beef mixture.

  3. Beat baking mix, milk and eggs until smooth. (I also sometimes add a dash of paprika and dried parsley leaves to the mixture more for the coloring than the flavor.) Pour over beef and chili mixture.

  4. Bake 25 minutes. Top with tomatoes, sprinkle with cheese. Bake until knife inserted comes out clean - approx. 8-10 minutes longer. Cool 5 minutes.

  5. Serve with fat-free sour cream, chopped tomatoes and shredded lettuce. (But be sure to calculate them separately as they are not included in this recipe.)
