Delicious, nutritious, and low cal seafood quiche with an impossible Bisquick crust. For variety, try broccoli in place of some of the cauliflower. Calories could be reduced even further by using low fat cheddar and omitting Parmesan if desired.

Recipe Ingredients for Impossible Seafood Quiche

10 oz cooked cauliflower
1/3 c. onion, chopped
1 c. shredded cheddar cheese
1 c. skim milk
1/2 c. Bisquick Heart Smart
3 eggs
4 oz. shrimp
6 oz. crab meat
2 tbsp. grated Parmesan cheese

Recipe Directions for Impossible Seafood Quiche

  1. Spray pie plate with non-stick coating.

  2. Slice cauliflower and place on bottom of pan.

  3. Sprinkle onion over cauliflower.

  4. Drain shrimp and crab and place over vegetable mix.

  5. Cover with cheddar cheese.

  6. Combine milk, eggs and Bisquick in blender. Add salt, pepper and garlic powder to taste. Blend and pour over all.

  7. Bake at 375 degrees for 25-30 minutes (or longer if needed to set).

  8. Remove from oven and sprinkle with Parmesan cheese. Allow to stand for 10 minutes before serving.
