Recipe Ingredients for Impossible Garden Pie

2 cup, chopped Squash, Summer, Zucchini, Includes Skin
8 oz Mushrooms
1 medium (2-1/2" dia) Onions
3 large Egg, Whole
0.75 cup Bisquick Reduced Fat All-Purpose Baking Mix
1.5 cup Milk, Nonfat, Fluid
2 Medium Tomatoes
2 oz Parmesan, Shredded Cheese
2 oz 2% Milk Reduced Fat Mild Cheddar

Recipe Directions for Impossible Garden Pie

slice all veggies and layer in a 9 x 11 oven-proof dish. Sprinkle parmesan over all. No salt needed, but use black pepper to taste. Combine baking mix, milk and eggs; pour over veggie mix. Bake at 400 for about 30-45 min. until knife inserted comes out clean. Sprinkle shredded cheddar cheese over top, heat for 5 more minutes, until melted. Let set 5 minutes before cutting.
