Great tasting and good-for-you vegetable soup.

Recipe Ingredients for Immune Soup

1 tbsp extra virgin olive oil
2 cups carrots, slices
1 cup celery, chopped
1 cup onion, diced
1 cup leeks, white and light green parts only,chopped
4 cloves garlic, minced
1 tbsp fresh ginger, peeled and minced
1 cup shitake mushrooms, finely sliced
1 cup parsley, chopped
1/4 cup basil, chopped
1 tsp salt
1 Freshly ground black pepper, to taste
1/4 cup chives, chopped, for garnish

Recipe Directions for Immune Soup

  1. Heat the extra virgin olive oil in a large pot. Add the carrots, leeks, celery, onions, garlic, and ginger and saute for 10 minutes over medium heat, stirring frequently.

  2. Add the shitake mushromms, parsley, basil, and 8 cups water. Season with salt and pepper. Turn the heat to high and bring to a boil; then reduce the heat to medium-low and simmer, covered, for 20 minutes. Serve in a bowl or mug and garnish with chives. Serves 5.
