Recipe Ingredients for Imam

2 pounds eggplant, peeled and sliced
1 medium onions, diced
2 large tomatos, sliced
1 1/4 pounds beef, ground, 92% lean, browned and drained
6 ounces tomato sauce
2 tsp salt
1 tsp allspice
1/2 tsp black pepper
2 tbsp olive oil

Recipe Directions for Imam

  1. Brush sliced eggplant with the olive oil and sprinke with 1 tsp salt. Brown under the broiler on both side or on George Foreman grill.

  2. Brown gound beef in a Dutch oven, drain and return to pot. Add in the onion, tomato sauce, remaining 1 tsp salt, allspice and black pepper. Cook until bubbling. Remove from heat.

  3. Cover bottom of roasting pan with 1/2 the eggplant. Top with the meat mixture. Top with the remaining eggplant. Then top with the sliced tomatoes

  4. Cook for 1 hour, covered in 400 degree oven.

  5. Uncover and turn heat to broil to brown tomatoes, about 5 minutes.

  6. Serve with salad, yogurt and pita bread.
