steamed rice-black bean dumplings are a popular south indian breakfast and "tiffin" item.

Recipe Ingredients for Idlis-1

1 cup black beans
3 cups white rice
2 tsp salt
2 cups water

Recipe Directions for Idlis-1

  1. soak beans and rice separately for three hours.

  2. rinse well.

  3. (if the black beans are with husk, the husk will come away when beans are soaked and subsequently rinsed). dehusked black beans are available in indian grocery stores.

  4. drain.

  5. grind/process the beans to a fine paste adding water as you grind.

  6. the bean batter should turn white and fluffy.

  7. now add the rice and grind till the batter feels coarse and fine-sandy to touch. use the 2 cups of water.

  8. add salt;

  9. ferment overnight.

  10. (in colder climates, you might have to use a some yeast to ferment the batter).

  11. the batter would have risen with a lot of air bubbles in it.

  12. use a laddle/spatula to beat the batter- this is to make sure the rice and bean batter are homogenously mixed. the bean batter tends to rise to the surface.

  13. pour an ounce or so of the batter in a stainless steel idli mould.

  14. steam for ten minutes.
