This recipe is from Magnolia's Bakery. the cookies are crunchy around the edges and chewy in the middle.

Recipe Ingredients for Iced ginger cookies

2 cup flour
2 teaspoon baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup canola oil
1 cup granulated sugar
1 large egg
1/4 cup unsulphured molasses
1 tablespoon granulated sugar
1 cup powdered sugar
2 tablespoons shortening
4 teaspoons water

Recipe Directions for Iced ginger cookies

  1. pre-heat oven to 350 degrees

  2. In small bowl combine flour, baking soda, salt, ginger, and cinnamon.

  3. In large bowl, on medium speed of electric mixer, beat together the sugar and the canola oil for 3 minutes. Add egg and molasses, beat well. Add the dry ingredients and mix thoroughly. Drop by rounded teaspoon onto ungreasd cookie sheet, leaving several inches between for expansion. Sprinkle lightly with granulated sugar. Bake for 10 to 12 minutes. Cool on cookie sheet for 5 minutes, then remove to rack to cool completely.

  4. To make the icing: combine powdered sugar, shortening, and water, beat until smooth and creamy.

  5. When cookies are completely cooled, spread a very thin layer of icing on each cookie with a small knife or spatula. Let icing set before stacking the cookies or they will stick together.

  6. Makes 2 1/2 dozen cookies
