With the dairy, you can go any where from skim and fat free half and half to heavy cream and whole milk. The worse for you, the better the texture... fat doesn't freeze. I counter lighter dairy with more booze... booze doesn't freeze. New life theory: nothing good in life freezes.

Recipe Ingredients for Icecream Base (Custard)

3 cups skim milk
2 1/2 cups fat free half and half
3 whole eggs
3 egg yolks
1/2 cup sugar
1 tsp vanilla extract
1/2 tsp salt (regular, non-iodized, table salt, if you know what's good for you)
2 ounces vodka

Recipe Directions for Icecream Base (Custard)

  1. If you've got a thermometer that works well, follow the temps given for best results.

  2. Combine milk and cream in a double boiler large enough to hold the whole batch. Slowly bring up to just below a simmer (190F, over about 10 minutes). Meanwhile, combine the eggs, yolks and sugar in another bowl (protip: use the measuring cup you used to get the dairy) and beat until a consistent, pale, yellow mixture forms. Beat in vanilla.

  3. Remove the bowl of the double boiler from the heat (turn off or cover the pan - don't let it boil out). While beating the egg mixture constantly, add 1/2 cup fulls of diary until about 2 cups has been incorporated. Add the egg mixture back to the dairy mixture and return to heat. Add salt.

  4. Bring the custard to just below a simmer (190F) while stirring constantly. Maintain this temperature until the custard is thickened enough to coat the back of a spoon (5 minutes) and remove the bowl of the double boiler to an ice bath. Cool completely in the fridge and process as normal.

  5. I typically add whatever flavorings I'm rolling with to the dairy on the first round of heating. Though this base has vanilla extract in it, it's a blank slate. For vanilla ice cream, up the extract to 2 tsp and add 1 whole vanilla bean, split and scraped. Just remember to fish out the pod before you add the eggs!
