You can change it up by using fat free plain yogurt and fat free sour cream instead of the light mayo.

Recipe Ingredients for Hye's Potato Salad

3 large potatoes
4 eggs
5 tbsp light mayonnaise
3 tsp dijon mustard
1 tsp garlic powder
1 tbsp sweet pickle relish
1 tsp black pepper
1/4 cup celery, diced
1/4 cup carrot, diced

Recipe Directions for Hye's Potato Salad

  1. Boil eggs at a hard rolling boil for 10 minutes.

  2. Peel potatoes and dice into 1 inch chunks. Boil in hard rolling boil for 10 minutes. The potatoes should be al dente.

  3. Peel eggs. Place eggs and potatos in a medium sized bowl and refridgerate for at least 12 hours. (Cooled completely.)

  4. Take a knife and run it through the eggs and potatoes until the eggs are diced. This will roughen up the potatoes a bit too.

  5. Add remaining ingredients and mix well. Enjoy! Perfect for picnics.
