Instead of using regular sugars I substituted the Splenda baking blends. I also used whole wheat flour instead of white flour.

Recipe Ingredients for Hybrid oatmeal cookies (modified)

1/2 cup apple sauce
1/4 cup splenda sugar blend
1/4 cup splenda brown sugar
2 egg whites
1 1/2 cups whole wheat flour
2 cups oatmeal
1/2 tsp cinnamon
2 tsp baking powder
1/2 cup 1% milk
1/2 tsp vanilla extract

Recipe Directions for Hybrid oatmeal cookies (modified)

  1. Preheat the oven to 375.

  2. Use an electric mixer to cream together the applesauce and sugars; add the egg whites one at a time and beat until well blended.

  3. Combine the flour, oatmeal, cinnamon and baking powder in a bowl. Alternating with the milk, add the dry ingredients to the batter by hand, a little a time, stirring to blend. Stir in the vanilla / almond extract.

  4. Drop by teaspoons or tablespoons onto ungreased baking sheets and bake until lightly browned, 12 to 15 minutes. Cool for about 2 minutes on the sheets before using a spatula to transfer the cookies to a rack to finish cooling.
