From the book "Pressure Cooking for Everyone" by Rick Rodgers and Arlene Ward. "What we call chicken cacciatore, the Italians call pollo alla cacciatorra, or hunter's-style chicken, because a hunter would bring home wild mushrooms from the forest along with whatever else he may have bagged. A good way to serve this earthy dish is on a bed of orzo pasta." You can substitute 1/2 c. of the broth for 1/2 c. of hearty red wine, such as Zinfandel. Note: I didn't include the chicken in the recipe because I wanted to be able to break down the dish based upon the part of the chicken that I ate.

Recipe Ingredients for Hunter's-style Chicken

1 serving Extra Virgin Olive Oil
1/2 oz Dried Porcini Mushrooms
8 oz Mushrooms, thinly sliced
1 onion Yellow Onion, chopped
2 stalk, large (11"-12" long) Celery, cut into 1/4-inch-thick pieces
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red, seeded and chopped
1 tsp Garlic, minced
8 oz 99% Fat Free Chicken Broth
3/4 tsp Italian Seasoning
0.17 oz Crushed Red Pepper
1/4 tsp Sea Salt
14 1/2 oz Petite Diced Tomatoes, drained

Recipe Directions for Hunter's-style Chicken

  1. Rinse the dried mushrooms under cold running water to remove any grit. Set aside.

  2. In a 5-7 quart pressure cooker, heat the oil over medium-high heat. Add the fresh and dried mushrooms, onion, celery, sweet red pepper, and garlic. Cook until the mushrooms begin to soften, about 3 minutes. Add the red wine and bring to a boil. Stir in the tomatoes, broth, Italian seasonings, and crushed red pepper. Season the chicken with the salt - 4 lb chicken, quartered and skin removed. Place in the cooker, leg quarters first, then the breasts, meaty sides up.

  3. Lock the lid in place. Bring to high pressure over high heat. Adjust the heat to maintain the pressure cooker. Cook for 10 minutes. Remove from the heat and quick-release the pressure. Open the lid, tilting it away from you to block any escaping steam. Transfer the chicken and sauce to a platter and serve immediately.
