Pasta baked in a cream sauce with spinach and zucchini. OMG it's wonderful.

Recipe Ingredients for Hungry Girl White Lasagna

3 medium zucchini
1 cup fat-free ricotta cheese
1 large egg whites
1 teaspoon garlic, chopped
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 1/2 cups mushrooms, chopped
2 cups fresh spinach, chopped
3/4 cup fat-free sour cream
84 g Laughing Cow Light Swiss cheese
4 tablespoons Parmesan cheese, reduced fat, grated
1/2 cup part-skim mozzarella cheese, shredded
1 1/3 servings Barilla lasagne

Recipe Directions for Hungry Girl White Lasagna

  1. Slice zucchini in half widthwise, then slice each half lengthwise into 1/4" thick strips. Set aside.

  2. In a medium bowl, combine ricotta cheese, egg whites, spices and 1/8 teaspoon each salt and pepper. Stir well and set aside.

  3. Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add mushrooms and cook until softened, about 4 minutes. Add spinach and cook until spinach is wilted and moisture has evaporated, about 2 minutes more.

  4. Remove skillet from heat and let cool. Blot away excess moisture from veggies using paper towels. Transfer to the bowl of ricotta mixture and set aside

  5. Re-spray skillet and return to medium-high heat. Working in batches, cook zucchini until softened, about 2 minutes per side. Remove from skillet and re-spray between batches. Set aside.

  6. To make the sauce, microwave the following: sour cream, cheese wedges, parmesan cheese, remaining salt & pepper for about 30-45 seconds until very warm. Stir until smooth and set aside.

  7. Spray an 8x8 baking pan with nonstick spray. Evenly place 1/3 of the cooked zucchini strips on the bottom. Spread half the ricotta cheese-veggie mixture on top. Evenly top with 2 lasagna sheets, followed by 1/3 of the cheese sauce.

  8. Repeat layering with the same amounts of zucchini, ricotta, lasagna sheets and sauce. Evenly top with zucchini, followed by the remaining sauce.Sprinkle with mozzarella and remaining 2 tablespoons parmesan cheese.

  9. Bake in the oven for 25-30 minutes, until cheese starts to brown.

  10. If you like, you can season with additional salt & pepper.
