Recipe Ingredients for Hungry Girl - Lasagna

1 lb zucchini
100 g portabella mushroom
1 eggplant
15 oz. frozen chopped spinach
1 egg white
1 cup fat free cottage cheese
4 servings shredded mozzarella cheese
1 tbsp. basil, chopped
1/4 tsp. salt
6 servings Hunts Tomato Sauce with Garlic
3 servings (213 g) Boca burgers

Recipe Directions for Hungry Girl - Lasagna

  1. Heat soy crumbles in microwave for 30 seconds and set aside.

  2. Slice zucchini, portabella, and eggplant into long strips. Spray a large pan with pam. Lay as many vegetables in pan as will fit. Cook on each side for about 2 minutes (3 minutes for the eggplant) and place on paper towel to reduce excess moisture. Do this until all vegetables are cooked.

  3. In a large bowl, combine the spinach (thawed and juice squeezed out), egg white, ricotta, basil, salt, and a pinch of nutmeg. Stir well and set aside.

  4. Spray an 8x8 plan with nonstick spray. Pour half of the tomato sauce into the bottom of the pan. Layer half of the veggies on top. Spread half the spinach mixture over the veggies, then sprinkle the soy crumbles evenly into the pan. Layer with the remaining veggies and then spread the rest of the spinach mixture on top. Cover with remaining tomato sauce. Top with graded mozzarella cheese. Bake uncovered for 30 minutes (or until cheese on top starts to brown.)
