This is THE favorite soup at our Lenten soup suppers. If I don't make it, I hear about it!

Recipe Ingredients for Hungarian Mushroom Soup

4 T butter
2 cups chopped onions
1 pound fresh mushrooms, sliced
2 tsp dried dill weed
1 T paprika
1 T low sodium soy sauce
2 c low sodium chicken broth
1 c milk
3 T flour (or cornstarch)
2 tsp lemon juice
1/4 c chopped fresh parsley
1/2 c sour cream
1 tsp salt
1 pepper

Recipe Directions for Hungarian Mushroom Soup

  1. Melt the butter in a large pot over medium heat.

  2. Saute the onions for 5 minutes.

  3. Add the mushrooms and saute for 5 more minutes.

  4. Stir in the dill, paprika, soy sauce and broth.

  5. Reduce heat to low, cover and simmer for 15 minutes.

  6. In a small bowl, whisk the milk and flour together. Pour this into the soup and stir well to blend. Cover and simmer for 15 minutes more, stirring occasionally.

  7. Finally, stir in the salt, pepper, lemon juice, parsley and sour cream. Mix together and allow to heat through over low heat about 3-5 minutes. Do not boil!
